Vegan Eggplant Stack
Grill eggplant slices then layer in a baking tray with;
spinach
grated carrot and zucchini
sun dried tomatoes
garlic sautéed mushrooms
red onion and tomato pasta sauce 
Bake for around 20 minutes on 180 degrees 
So easy and delicious!
